FOODLAND ONTARIO’S MULLIGATAWNY SOUP
Serves 4 as main course
Preparation time: about 25 minutes
- 1 tablespoon (15 mL) olive oil
- 1 large onion, diced
- 2 medium potatoes, peeled and diced
- 1 tablespoon (15 mL) minced fresh gingerroot
- 2 cloves garlic, minced
- 2 tablespoons (25 mL) curry powder
- 1/4 teaspoon (1 mL) cayenne, or more to taste
- 3 cups (750 mL) chicken broth
- 1 can (14 ounces/398 mL) light coconut milk
- 2 large tomatoes, diced
- 2 cups (500 mL) diced cooked chicken or turkey (optional)
- 2 cups (500 mL) torn spinach leaves
- 1/4 cup (50 mL) fresh coriander leaves
- Salt and pepper
Optional garnishes:
- Shredded unsweetened coconut (brown over medium-low heat in a dry skillet)
- Fresh unpeeled apple, diced small (sprinkle with lemon juice to prevent apple from turning brown)
1. In large saucepan, heat oil over medium heat; cook onion and potatoes until onion is softened, 3 to 4 minutes, stirring often. Stir in ginger, garlic, curry powder and cayenne; cook 1 minute.
2. Add chicken broth and coconut milk; cover and bring to boil over high heat. Add tomatoes, and chicken or turkey (if using) and return to boil. Reduce heat and simmer 15 to 20 minutes, or until potatoes are tender.
3. Stir in spinach just until wilted, about 30 seconds. Remove from heat; stir in coriander. Season to taste with salt and pepper. If using garnishes, sprinkle on individual bowls and serve.

All I can think about it getting away for Christmas holiday’s….I still have 2 exams to go but it is soo hard to study for them….I can’t wait to see the fam again, all my friends and Matt….It is soo close but I still have so much to do before then….I am too excited……

WOO!…..except I can’t load the bloody thing. I don’t know if it is a problem with the camera or with me, but I have wasted 4 rolls of film trying to load it. So frustrating……and it is taking all my effort not to try another roll…..but I am going to take it to the photography teacher at school tomorrow. I have waited this long I guess I can wait one more day…..grrrrr.

I really wish this weekend didn’t have to end. It was so hard to come back to Kelowna after 4 wonderful days, and 4 even better nights. Now I am back to doing what feels like a million school projects…..but the good news is in just over a month now I will be done for the Holidays!!…..Really can’t wait….

Woo woop!….The whole school is power-less….why couldn’t this have happened last week when I was dying from white wine poisoning! Today Kassi and I find out if we get the apartment we looked at on Friday….fingers crossed. And I am still waiting for my fun camera to get here. Hopefully it will come before I go to Vancouver next weekend. So this is the first time in like 6 years that I don’t have a job…and it is enjoyable…but I am soo used to having all this extra money for fun and for shopping. It is amazing how fast it goes when nothing is coming back in, and I am not the kind of person who can live the poor student lifestyle. Especially since my passion for shopping has only gotten stronger, which is funny because I never really used to be like that. So as nice as it is not to work, and to have tons of time for school….I think I am going to have to get a job in January. With school and work it should be pretty hectic….but it is better than being bored!

I hate my stupid bitch landlord. About a month ago she told me and my roommate that she was selling the place, and from the beginning she was being weird about it. So finally I called her and asked what was going on, and my main concern was, will we be kicked out? She assured me that we wouldn’t be and she was going to look after her “girls”. So after a month of people just coming into our place and annoying us at random hours of the day, tonight we find out that it has been sold….and guess what….we have to move…..BIIIIIITCH….I wouldn’t have been nearly as annoyed if she had been honest in the first place, but she literally told me not even to think that this would happen. But it has. And to be nice she gave us an extra month to move…sweet….thanks….now we get to move for January 1st…no thanks.

I never really knew how scary it is to find a new hairdresser. But I am in need of a hair fix, so I decided to go with a salon called Cream. Kassi tells me it is known as the best in Kelowna. I loved my Vancouver stylist, but I just can’t wait any longer, and I am not going to have enough time when I am in Van next weekend. I am going in next Tuesday at 2:30pm WOO!

Edwin Van Der Sar is the goalie for the Dutch football team. He is amazingly good. He has been playing for the Dutch team longer than any other player and is their captain. He has so much passion when he plays, and makes watching games very intense. And I know I hope he will be around for South Africa, 2010.

So not having had cable for such a long time I forgot how addictive TV can be. I already asked Matt to tell me to turn off the tube if I am not watching one of the shows listed. But I think if something is written down it is more likely to actually happen.

6. Any documentaries that aren’t completely useless.
